Recipe: english breakfast tea infused date loaf

English breakfast tea infused date loaf

I was lucky enough to be sent some products from the wonderful @chanui100 and boy, are they delicious! I crafted this delicious recipe using their loose leaf tea which is rich in flavour and very fragrant in this loaf. This is a very easy treat, and even better served straight from the oven and piping hot. Alternatively, this can also be toasted with lashings of butter mmmm. Ingredients

- 1 1/2 Tbsp english breakfast loose leaf tea

- 1 1/4 cup boiling water

- 2 cups chopped dates

- 1/2 cup brown sugar

- 2 cups sifted flour

- 2 tsp baking powder

- 1 whisked egg

- 1 tsp cinnamon

- 1 tsp nutmeg

- 1 tsp ginger

Method

Place the loose leaf tea and boiling water into a jug and let this steep for 10 minutes. Whilst the tea is brewing, chop your dates into small 1cm pieces. After 10 minutes, place a sieve over the dates and pour the tea infused water into the same bowl. Add the brown sugar and set this aside for 20 minutes for the tea flavours to really come through.

Stir through the egg to the wet mixture before measuring out your dry ingredients. Mix the wet and dry together and fold through until no flour pockets are seen (be careful not to over mix). Pour mixture into lined loaf tin and bake at 180 degrees for 35 minutes. Enjoy!
